Delicious Sloppy Joes

Sloppy Joes are a favorite in our home, and today I would like to share my sloppy joe recipe with you!  They are delicious! I almost always serve these with homemade French fries and a salad.  I love this meal because it works all year round.  It is comforting on a cold, winter night and also perfect for a sunny, summer afternoon!

Tip:  Since this recipe makes more than my family can eat at one meal, I flash freeze the leftover meat mixture in individual 1/2 cup portion sizes on a baking sheet lined with parchment paper.  Once they are frozen, I transfer all of the individual portions to one large freezer bag. This is so convenient for a last minute lunch or for a supper when I am too busy or tired to cook.  I simply take out however many portions we need, and then heat them over low heat on the stove top until they are thawed and heated through.  This quick, easy, “convenience” meal has been a lifesaver for me on more than one occasion!

Ingredients:

  • 2 pounds ground beef
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 (6 oz) can tomato paste
  • 1/4 cup honey
  • 1/2 cup white vinegar
  • 1/4 cup water
  • 1 tsp salt
  • 4 tbsp sucanat (or brown sugar)
  • 2 cups chunky salsa
  • 3 tbsp Dijon mustard
  • 1/2 tbsp molasses

DIRECTIONS:

1. Cook ground beef in a large skillet over medium heat with onion and garlic until meat is no longer pink.  Drain any excess grease.

2. Combine remaining ingredients in the same skillet as the beef mixture.  Bring to a simmer, lower heat, and cook, stirring occasionally, for 20 to 30 minutes.   If desired, add more salt and pepper to taste.  Serve on your choice of grilled bread or bun.  Oh, and don’t forget the cheddar cheese!  Enjoy!
