Garlic Carrot Potatoes

This awesome side dish is as pretty to look at as it is yummy to eat!  Kids love them too!

My husband and I have been married for 4 years, and up until a few months ago, he had never cooked for me – not once! However, that all changed this past Valentine’s day, and let me tell you...he did a really good job! The dinner he decided on was Parmesan chicken drumsticks with a salad and a side of smashed carrot potatoes.  This is one of our favorite side dishes, so he knew that he wanted to include them in my special dinner!  When he asked me for my recipe, I told him that I didn’t have one.  I then proceeded to tell him how I make them, and  I was met with a blank stare.  ;-)   I’m sure you’ve seen the look before…you know, the one your husband gives you when you know he didn’t understand a word you just said…yeah, that one!  So, I decided to be nice and come up with a written recipe to help him out.  Mmm…am I glad I did!  They were amazingly delicious.  Give them a try – I’m sure you won’t be disappointed!

Ingredients

  • 1 ½ pounds potatoes, peeled and diced (about 6 medium sized)
  • 1 ½ pounds carrots, peeled and diced (about 9 medium sized)
  • 5-6 cloves garlic, peeled and finely minced
  • 4 tbsp butter (half of a stick)
  • 1 tsp dried parsley
  • 1 – 1 ½  tsp. sea salt, to taste (less if using refined salt)
  • ¼ – ½ tsp freshly ground pepper, to taste
  • 1 – 2 tbsp milk

Directions

Place potatoes, carrots, and garlic in a medium-sized saucepan and cover with plenty of water.  Bring water to a boil over high heat.  Reduce heat to medium-high and cook until vegetables are tender and can be easily mashed, about 20-25 minutes.  Drain the water.  To the pot of cooked vegetables add butter, parsley, salt, and pepper.  Mash well with a potato masher.  (You could also use a food mill if you would like them silky smooth.  A potato masher will give you a chunkier texture, which is what we prefer.)  Once the veggies are mashed, stir in the milk until they reach your desired consistency.  Enjoy!

    My mom used to make these for my brother and I when we were kids… but her recipe didn’t involve garlic… just mashing carrots into the potatoes to actually get us to eat carrots!

    Hi Mindy,
    Just found this recipe and it looks delicious. I wanted to mention that as an alternative to boiling the veggies, they can easily be steamed until soft enough to mash. That way you won’t lose as many nutrients as boiling. I didn’t realize you could steam potatoes or carrots but I got the idea from the book WORLD’S HEALTHIEST FOODS. And I have been steaming them ever since.
